Quinoa Pilaf Comfort

Not only healthy and delicious, this Quinoa Pilaf is beautiful, to delight your guests or host.

1 cup red quinoa
3 cups vegetable broth
8 oz kale
2 tbsp extra-virgin olive oil
4 to 6 cloves garlic
3 to 4 scallions
2 cups cooked corn kernels
2 jarred roasted red peppers,
2 tbsp lemon juice
1 tsp sweet paprika
1 tsp ground cumin
1/2 tsp dried rosemary
Salt and freshly ground pepper to taste

1) Combine the quinoa with 3 cups of vegetable broth in a medium saucepan and
bring to a rapid simmer, then cover and
simmer for about 15 to 20 minutes.
2) Strip the kale leaves from the stem, discard the stems, rinse the leaves.
3) Heat the oil in a large skillet, add the garlic and sauté over low heat until golden.
Add kale, stir together, and cover until
leaves are wilted.
4) Add the remaining ingredients and cook,
stirring frequently for 4 to 5 minutes longer.
Transfer to a serving bowl and enjoy
